Sweet Potato Chips

Ingredients:
3-4 sweet potatoes
Salt and Pepper
Oil

Directions
Preheat the oven to 425
Using a mandolin slicer cut the sweet potatoes into thin slices
Place sweet potato slices on a baking sheet (we used a silicon mat on the baking sheet)
Spray sweet potato slices with Oil of your choosing (we used coconut oil)
Season with Salt and pepper
Bake for 10-12 minutes; be careful to watch them as they may start to burn
Remove from oven and place on cooling racks for 5-7 minutes
Consume

Korean style beef

Ingredients:
1 pound ground beef
1/2 cup of Coconut aminos
1 tablespoon of toasted sesame oil
3 cloves of minced garlic
1 tablespoon of minced ginger
1/2-1 teaspoon of crushed red pepper
salt and pepper
1 bunch of green onions, diced

Directions:
Heat a skillet and brown the hamburger image3 (3)
In a separate skillet saute the minced garlic and diced onions.

Once the onions of garlic have been cooked, add them to a mixing bowl. Add the coconut aminos, ginger, salt and pepper, crushed red pepper and sesame oil to the mixing bowl.

Whisk all the ingredients together that are in the mixing bowl.

Once the burger is browned, drain the access fat/liquid from the skillet and add the ingredients from the mixing bowl to the skillet and  simmer for 5-10 minutes on low heat.
Serve over rice or cauliflower rice

Coconut Milk “frappuccino”

Ingredients:
1 cup cold brewed Coffee
1 piece of dark chocolate, broken up into small pieces
1/2 can of coconut cream or full fat coconut milk
1 cup of ice

Directions:
If you are using full fat coconut milk-Place can of coconut milk in the fridge 4-6 hours before making the frappuccino at least, these will help the water and fat separate. Add a 1/2 cup of the separated coconut milk fat to the blender.
Add the dark chocolate, coffee, ice to the blender.
Use the pulse setting on the blender for 3-5 seconds two or three times.
Transfer the frappuccino mixture from the blender to a glass and enjoy.
